Every item here has survived multiple summers, multiple kids, and multiple countries of sand. Worth noting, we purchase only 2 items at our destinations: beach toys and a beach umbrella.

1. Extra Large Mesh Beach Bag the $15 item that started this whole system. Pool and beach approved, sand falls straight through, and it’s big enough to fit everything below.

2. Foldable Chairs these may seem extra, but just over 2 lbs each, and every friend we’ve ever brought to the beach has asked where we got them. Worth every ounce in the bag.

3. Waterproof and Sandproof Beach Mat Also feels extra. Also non-negotiable now. Sand does not stick, water does not soak through, and it dries in the sun in minutes.

4. Small Turkish Towels Typically long-term stay rentals don’t have beach towels. These dry in minutes and are super compact for packing.

5. Sunglasses the key is to get ones that are polarized AND flexible

6. Crocs easy to slide on and off, and waterproof. The least glamorous item on this list, the one I swore I’d never have my kids own, and possibly the most used.

7. Life Vest For ages 4 and up, we use vests. For ages 3 and under we use these instead.

“Wait, you’re working while you’re there?”

“How do you just... move to Spain for the summer?”

“Who watches your kids?”

I’ve answered some version of these four questions every day since we landed, usually more than once. And I get it. Four years ago I would have asked the same things.

This marks our third summer packing up our lives in San Francisco to live and work remotely from Europe, and I don’t see us ever stopping. There is something magical about trading our familiar home routine for a few weeks of total immersion, watching our 4- and 6-year-old adapt to a new culture, and finding our footing in a brand-new city.

But this summer is different. This summer, 30 other families came with us on my dream summer abroad program.

Just one week into living in San Sebastian, Spain, with Roam Collective, the company I co-founded last fall, and we have fallen in love with this beach town. We may have been exhausted and overheated those first few days (yes that heat wave throughout Europe was brutal), and there were a few travel moments I’m still processing. But I can confidently say this is my favorite destination yet.

For the next six weeks, I’m swapping my usual Summer Camp Research programming for something more personal: a weekly, unfiltered log of our life in San Sebastian. Not our vacation… our real, working life. The work calls, the restaurant exploration, the wins, the meltdowns (theirs and mine), and the behind-the-scenes of running a scaling business remotely (we just opened our 4th MNTSTUDIO location two weeks before leaving, and #5 is deep in construction), as well as preparing for Roam Collective Summer 2027 from the city where its first cohort is living.

Here’s what three years of living and traveling abroad with my family has taught me, I call it my 3-Day Rule: it takes kids three full days to adjust to a major time change. For those first 72 hours, you lower every expectation, assume you’ll be sleeping in late, take it painfully slow, get in sunlight and a low-effort activity and roll with it. By Day 4 you’ll get your kids and a real routine back.

But before the 3-Day Rule even kicks in, you have to actually get there. For us, that meant a 22-hour travel day from San Francisco, two flights, one layover with my 4 and 6-year-olds.

After years of doing this, I’ve got our carry-on entertainment strategy down to a science. I know exactly which toys keep my kids occupied and quiet in a tight space and which ones are just dead weight in a backpack. Everything below made the cut because it’s earned it, flight after flight.

First things first, toy storage

The system matters as much as the toys. If your kid can’t see their options and put things back, everything ends up on the floor.

Logistics: Getting There & Staying There

Ease of Getting There:

• Your camp choice dictates your arrival hub:

  • Geneva-area and French-Swiss mountain camps (Verbier, Villars, Les Crosets) → fly into Geneva (GVA)

  • Zurich and Basel camps → fly into Zurich (ZRH)

• Both hubs handle direct daily flights from the U.S. East Coast (NYC/Newark). West Coast families (LAX/SFO): expect one quick stop in London, Frankfurt, or Paris.

• The commute from the airport:

  • Geneva & Zurich Camps: A seamless 15-to-30-minute train ride from their respective airports.

• Alpine Valley Camps (Verbier/Villars): A scenic 1.5-to-2-hour drive or direct Swiss rail trip from GVA.

Getting Around: Stroller vs. Scooter Realism

• The Stroller: Swiss pavements and train platforms are perfectly flat and accessible, making strollers easy. However, skip the heavy luxury model and bring a durable, compact travel stroller with all-terrain wheels to handle mountain gravel or cobblestones. For mountain valley trails, a high-quality hiking baby carrier backpack is essential.

• Kid Scooters: Pack them immediately. Switzerland is the global capital of micro-mobility. Sidewalks, pedestrian paths, and lakeside promenades are immaculately paved. Kids ride scooters everywhere, it is the easiest way to manage camp drop-offs without a vehicle.

Is a Car Necessary?

• Geneva, Zurich & Basel: No, absolutely not. A car is an expensive liability in Swiss cities due to $8/hour parking fees and highly restricted zones. The Swiss Federal Railways (SBB) tram and train network is so hyper-efficient and accurate that you can commute flawlessly using just an SBB Family Pass.

• The Mountain Valleys (Verbier, Villars, Les Crosets): Yes, conditionally. While trains connect major valleys, managing specific mountain camp times, erratic high-altitude weather shifts, and major grocery runs requires a reliable vehicle. Rent early, as automatic transmissions are limited.

Housing:

• Geneva & Zurich Rent: Premium city apartments or lakeside 2-bedrooms range from $6,500–$12,000/month in high-season July.

• Basel Rent: Slightly more approachable, with family flats averaging $4,500–$7,500/month.

• Alpine Resort Chalets (Verbier/Villars): High-end mountain chalets can be priced extremely high, ranging from $10,000-20,000 /month for July blocks.

The “American Reality” Check:

• Air Conditioning: Virtually non-existent. Stand-alone A/C is extremely rare. While alpine nights stay cool, a city heatwave will require you to use cross-breezes and heavy fans. Always ask your rental host to confirm fan availability.

• Laundry Restrictions: Standalone tumble dryers are rare inside individual Swiss flats. You will likely use a shared building laundry room (Waschküche) that runs on a strict, assigned calendar rotation, or use a balcony drying rack.

• Groceries match Manhattan. Or exceed it. Meat and dairy carry heavy agricultural tariffs, expect upwards of $15/pound for basic chicken breast. Dining out matches or exceeds San Francisco budgets.

The Weather: What to Expect in July

• In the lowland cities (Geneva, Zurich, Basel): beautifully comfortable, hovering between 75°F and 85°F during the day is warm and sunny.

• In the mountain valleys (Verbier, Villars): daytime highs sit at 65°F–75°F, and dropping into the 50s on high trails or cable cars is regular. Pack real layers for the kids, not just a hoodie thrown in as an afterthought.

• The evening vibe: Refreshing and crisp. The moment the sun dips behind the peaks or over the lakes around 7:30 p.m., a cool breeze rolls in. It’s the kind of evening that makes you close your laptop and go outside.

The Swiss Food Scene & Typical Schedule

What to Eat:

• Rösti: A comforting, classic Swiss dish of crispy, pan-fried shredded potatoes topped with melted cheese, fried eggs, or bacon. It is the ultimate kid-approved post-camp refuel.

• Swiss Chocolate & Birchermüesli: Sourced fresh daily. True Swiss oats soaked with milk, yogurt, grated apples, and nuts is the breakfast standard, paired with high-end regional chocolate for treats.

• Raclette / Fondue: Melted cheese scraped over boiled potatoes, gherkins, and pickled onions. Even in July, hitting a mountain lodge for a fondue ritual is a non-negotiable alpine experience.

• Fresh Lake Perch (Filets de Perche): Lightly battered, delicate local fish served alongside fries by the lakeside terraces in Geneva or Zurich.

Typical Eating Schedule:

• Lunch (12:00 p.m. – 1:30 p.m.): Standard and prompt. Most Swiss camps include a hot, premium communal meal or highly structured packed lunch window.

• Zvieri (4:00 p.m. – 4:30 p.m.): The mandatory Swiss afternoon snack. Fruit, local cheese, or bread with a piece of chocolate to power the kids right at camp pick-up.

• Dinner (7:00 p.m. – 9:00 p.m.): Earlier and more family-aligned than Southern Europe, meaning you can easily maintain your kids’ bedtime routines.

Things to Do With Kids

• Lindt Home of Chocolate (Zurich): Take the kids to see the world’s largest chocolate fountain, complete with immersive historical exhibits and unlimited chocolate tasting rooms.

• The Olympic Museum (Lausanne/Geneva Area): A high-tech, interactive sports paradise on the lake where kids can test their running speed, agility, and balance against Olympic records.

• Aquatis Aquarium-Vivarium (Lausanne): Europe’s largest freshwater aquarium, featuring massive indoor biomes, crocodiles, and komodo dragons that kids can view up close.

• Zoo Basel (Basel): Known locally as the “Zolli,” this is an exceptional, centrally located urban zoo with beautiful walking paths and a massive world-class aquarium.

• Mount Pilatus Golden Round Trip (Zurich Area): A bucket-list day trip involving a lake boat, the world’s steepest cogwheel railway, an aerial cableway, and high-altitude mountain playgrounds.

• Verbier Bike Park & Alpine Luge (Mountain Valleys): Ride approachably designed family downhill mountain biking tracks or twist down ski slopes on high-speed mountain carts on rails.

Things to Do Without Kids

• QC Terme Chamonix Day Trip (Geneva Area): Cross the French border for a quiet afternoon soaking in heated outdoor infinity pools directly facing the Mont Blanc massif.

• Lavaux Vineyard Terraces Wine Tasting: Walk through the UNESCO-listed terraced vineyards overlooking Lake Geneva, tasting crisp, exclusive local Chasselas white wines.

• Thermalbad & Spa Zurich: Soak in ancient stone vaults inside a converted historic brewery, finishing with a rooftop thermal pool featuring panoramic city skyline views.

• Fondue at Les Armures (Geneva): Snag a table at Geneva’s most historic old-town institution for an unhurried, authentic cheese fondue paired with local white wine.

• Kunstmuseum Basel Gallery Walk: Explore one of the oldest and most important public art collections in the world, specialized in Holbein masterpieces and modern art.

• Sunset Paddle and Lakeside Lounge (Zurich): Rent a stand-up paddleboard on Lake Zurich at sunset, ending with cocktails at an upscale, historic Badi water lounge.

Local Support

• Babysitting24 / Rockmybaby: Premier, highly reliable Swiss agencies providing vetted, English-speaking childcare and temporary nannies across Geneva, Zurich, and the alpine resorts.

• Average Rates: Expect to pay $25–$35 CHF/hour ($28-$40). Childcare is exceptionally expensive here, reflecting the nation’s high minimum wage standards.

The French Alps are like a fairytale. The scale of the landscape slows your nervous system down whether you want it to or not. The mornings feel longer. The food tastes better. And you stop trying to optimize the day and just live inside it.

For families who love nature, movement, and a quiet that actually restores you, this is the setting you’ve been looking for.

The logistics take a little planning (mountain roads mean a car is non-negotiable) but the tradeoff is a summer that feels nothing like ordinary life.

Logistics: Getting There & Staying There

Ease of Getting There:

• Flights: Fly into Geneva Airport (GVA). Direct flights from the US East Coast are common and highly efficient. From the West Coast expect 1 stop in major hubs like London, Paris, or Frankfurt.

• The Commute: Most camps are about a 1-hour drive from GVA.

• ZTL and Parking Passes: Many historic or pedestrianized alpine villages tightly restrict vehicle access via camera-enforced Zones à Trafico Limitato or automated bollards.

Housing:

• Chamonix & Megève Rent: A central 2-bedroom chalet or modern apartment ranges from $5,500–$12,00/month in July.

• Morzine Rent: Alpine chalets in Morzine average $3,500–$9,000/month for July.

The Eastern French Food Scene & Typical Schedule

What to Eat:

• La Tartiflette / Fondue: A comforting alpine staple of sliced potatoes, lardons, and melted Reblochon cheese. It is heavy, rich, and the ultimate kid-approved reward after a day of climbing mountains.

• Fresh Baguettes & Local Comté: Sourced daily from the village boulangerie and fromagerie. Pairing a raw-milk cheese with a warm crusty loaf is the simplest, cheapest, and most authentic way to handle family picnic lunches.

• Tarte aux Myrtilles: Traditional wild mountain blueberry tart found in every bakery across the Haute-Savoie. It’s sweet, slightly tart, and non-negotiable after a long hike.

• Savoie Charcuterie: Cured mountain hams and dry sausages (saucisson sec) seasoned with local herbs, perfect for packing into camp backpacks.

• Mer de Glace & The Red Train (Chamonix): Ride the vintage red cogwheel train up to France’s largest glacier, then descend into a massive, hand-carved ice cave complete with glowing ice sculptures.

• Lake Annecy Beach Day (Annecy): Spend a sunny afternoon renting paddleboards or electric boats on Europe’s cleanest lake. Head to Plage d’Angon for shaded grassy lawns and safe, shallow lake swimming for young kids.

• Les Gets Splash & Adventure Park (Morzine Valley): Take the kids to a massive, floating inflatable obstacle course right on the lake, surrounded by alpine forest.

There is only one reason I personally haven’t seriously considered this region: Southern Italy in July is hot. Relentlessly hot. You have to go into this experience knowing and expecting Mediterranean sun that slows everyone down. I’m originally from Dallas and recall every single summer growing up being miserably hot… hopping from pool to A/C to lake on rotation. That’s not me. But if you love a good toasty day, keep reading…

The positive tradeoff is that the heat is exactly what forces the region into its slow-paced lifestyle. Because it’s too hot to rush, you’re practically required to trade the frantic pace of American life for a late-afternoon riposo (siesta), long sea days, and a lifestyle centered around the evening hours. Moving here means stepping away from highly curated tourist spaces and sliding into the authentic, slow, and sun-drenched ways of the Southern Italians.

Logistics: Getting There & Staying There

Ease of Getting There:

• Campania: Fly into Naples International Airport (NAP), which is highly central and just a 15-minute taxi ride from the historic center.

• Puglia: Use Bari Karol Wojtyła Airport (BRI) or Brindisi Airport (BDS) depending on which side of the coast you base yourself.

• Sicily: Fly into Palermo Falcone-Borsellino (PMO) for the western side of the island or Catania-Fontanarossa (CTA) for the east.

• Sardinia: Fly into Olbia Costa Smeralda (OLB) or Alghero Fertilia (AHO) if staying on the northern side of the island or Cagliari Elmas (CAG) for the far south.

• Flights: Seasonal direct flights from the East Coast straight into Naples and Palermo are common. If you are flying from the West Coast, it’s going to be a long travel day(s). And expect big delays if flying an Italian airline.

Getting Around: Stroller vs. Scooter Realism

• The Stroller: You need a highly compact, lightweight travel model with durable wheels. A baby or toddler carrier is way easier.

• Kid Scooters: Leave them at home.

• Is a Car Necessary?

  • Naples: No. Use the Metro and regional trains (like the Circumvesuviana) for day trips.

  • Puglia & Sicily: Yes, absolutely. If your camp is in Siracusa, Trapani, or the Puglian countryside, you cannot survive without a rental car.

  • Sardinia? Yes, absolutely. While you can manage without one in main city hubs like Cagliari, you cannot manage a summer camp routine or explore the island without a car.

Housing:

• Naples: A 2-bedroom in a family-safe, upscale neighborhood like Vomero or Posillipo ranges from $2,700–$5,000/month.

• Sicily: High-end coastal apartments in Palermo (Mondello area), Trapani, or Siracusa (Ortigia) have a large range from $2,400–$4,000/month in July.

• Puglia: A central apartment in Bari or a traditional country house (masseria) further south in Brindisi ranges from $3,000-$7,000/month.

• Sardinia: In the ultra-exclusive Costa Smeralda (Porto Cervo/Porto Rotondo), expect high-season July rates of $4,500–$8,500/month. If you look slightly further south to San Teodoro, or west to Alghero, apartments range from $2,500–$4,500/month.

The “American Reality” Check:

• Air Conditioning: This is an absolute dealbreaker. Do not trust descriptions that say “naturally cool stone walls.” You must explicitly verify that your rental has high-functioning A/C in every bedroom.

• Laundry: Washers are standard, but you will be hanging your laundry on a drying rack on the balcony.

• The “Riposo” (Siesta): The region shuts down completely between 1:30 p.m. and 4:30 p.m. Grocers, shops, and restaurants close so everyone can escape the heat.

• Trash Management: Southern Italian cities, particularly parts of Naples and Palermo, struggle with public waste management. It can be jarring for American families. Focus your housing searches on residential, upscale neighborhoods to minimize this.

The Weather: What to Expect in July

• The Temperature: Expect daily highs ranging from 85°F to 93°F in Naples, while Puglia and inland Sicily can easily climb to 95°F–100°F during a heatwave.

• The Evening Vibe: The entire community revives after 7:30 p.m. when the sun goes down and a cooler sea breeze rolls in.

The Southern Italy Food Scene & Typical Schedule

What to Eat:

• Pizza Napoletana (Campania): Wood-fired, soft, and simplistic.

• Panzerotti & Taralli (Puglia): Fried dough pockets filled with tomato and mozzarella, and crunchy savory seed rings.

• Granita con Brioche (Sicily): Semi-frozen fresh fruit or ice served with a warm, fluffy sweet bun.

• Pane Carasau (Sardinia): A paper-thin, incredibly crispy flatbread. Drizzled with local olive oil and sea salt (called Pane Guttiau).

• Street Seafood: Paper cones packed with fried calamari and small local fish bought fresh by the harbor.

Typical Eating Schedule:

• Lunch: 1:00 p.m. – 2:30 p.m. The main meal of the day before the afternoon shutdown.

• The “Merenda”: 5:00 p.m. The late afternoon snack, usually gelato or fruit, to hold everyone over until a late dinner.

• Dinner: 8:30 p.m. – 10:30 p.m. Restaurants rarely even open their doors before 8:00 p.m.

Things to Do With Kids

• The Ruins of Pompeii & Herculaneum (Campania): Walk through real ancient Roman cities frozen in time. Opt for Herculaneum with younger kids. It’s smaller, better preserved, and offers more shade.

• Family Pizza Making Class (Campania): Book a workshop in Naples where master pizzaioli teach kids how to stretch the dough, throw on fresh toppings, and watch it rise in a wood-fired oven.

• Città della Scienza (Campania): This is a massive, hands-on science museum featuring a great interactive planetarium and a museum dedicated entirely to the human body.

• Puppet Theatre / Opera dei Pupi (Sicily): Take the kids to a traditional Sicilian marionette show.

• Mondello Beach Day (Sicily): Spend a classic day renting umbrellas and chairs on the white sands of Mondello.

• Bioparco di Sicilia (Sicily): A zoo and botanical garden that features life-sized dinosaur models hidden along the garden paths.

This week I gathered up my latest batch of skincare empties. I’m sharing what works, what doesn’t, and what I’ll be keeping in my routine.

Would I Buy Again?

1. First Aid Beauty Pads

No - TBH I used these for years without realizing I have sensitive skin and these are not great for sensitive skin. They’re more expensive, but I prefer Elemis Dynamic Resurfacing Pads since they’re gentler and just as effective.

2. Avene Milk Cleanser

Yes, definitely - Love the texture and super gentle on the skin. I swear by double cleansing, starting with this ending with a foam cleanser.

3. Nuxe Roll On Body Oil

Yes, the holy grail of body oil - I prefer the roller over the spray, but you’ll go through the roller more quickly.

4. Caudalie Resveratrol-Lift

Yes - Unfortunately you can't find my preferred liquid version in the US (but you can buy it from UK beauty site here). Luckily the US sells this in a slightly thicker cream version. I stocked up on the liquid one in France because I'm obsessed with the easy no-mess application - I can squeeze it directly onto my face. It’s my go-to morning moisturizer.

5. Osea Ocean Cleanser

No - I liked this in the morning for the strong eucalyptus scent, but it's too energizing for a nighttime cleanser. Since I prefer to just have one gentle cleanser I can use day and night, this isn’t it.

6. Osea Ocean Wave Cleansing Oil

No - I’m just not a fan of oil cleansers. But if I was, I’d get this one. It was super effective at removing makeup, lightweight and left my skin feeling hydrated. I prefer the Avene Milk Cleanser or Elemis Pro-Collagen Cleansing Balm instead.

7. Merit Instant Glow Serum

Big NO - I hate the way it comes out of the bottle... it sprays everywhere, it's super lightweight and, honestly, I don't think it does anything to hydrate. For daily serums, I’m fully convinced a growth factor serum is the best investment to make for your skin, so I’m currently testing out Dr. Diamond’s InstaFacial Collection (it’s two serums in the AM, the same two plus one in the PM).

8. Caudalie Vinoperfect Serum

Big YES - I'm on my 6th bottle of this. I stock up in Europe because it's significantly cheaper, but it’s worth every penny. Yes it actually lightens dark spots and I've had multiple friends tell me the same

9. Ursa Major Alpine Rich Cream

Yes - Amazing in winter or if you’re somewhere dry. I love it as my overnight cream.

10. Tula Beauty Sleep Cream

No - I definitely wouldn’t call this a deeply hydrating overnight cream

11. Filorga Global-Repair Eyes and Lip Cream

No - no real noticeable effects. Again, I’m all in on growth factor serum now and will report back on Dr. Diamond’s InstaFacial Collection.

I of course visited Amsterdam during my study abroad semester, but I also had the opportunity to go back in my mid-twenties for work… and let me tell you I had one of the craziest nights of my life that involved a rave in a warehouse on an island and returning home on the train at 6am 😆 I imagine going back as a family though would feel different in all the right ways.

And I grouped Belgium here, not because the cultures are similar (they are not), but purely because geographically they are very close to each other with major cities less than 2 hours apart by train. This could be a very fun, very easy 2-part urban summer adventure. And fun fact: my grandmother was from Antwerp and I’ve always wanted to visit.

Logistics: Getting There & Staying There

• Amsterdam: Fly into Amsterdam Schiphol (AMS)

• Belgium: Fly into Brussels Airport (BRU)

• Flights: Both are massive international hubs with direct flights from most major U.S. cities.

• Brussels/Waterloo Rent: More affordable than Amsterdam. You can find high-end 2-3 bedroom apartments in Ixelles or Waterloo for $4,300–$8,000/month.

The “American Reality” Check:

• Air Conditioning: Like most of Northern Europe, A/C is rare in homes. July temperatures are usually a comfortable 70°F–75°F, but if a heatwave hits, you’ll be relying on open windows and fans.

• Stairs: Historic Dutch and Belgian townhomes are notorious for “staircases from hell.” They are steep, narrow, and winding. If you have a toddler, triple-check the floor level of your rental.

• Lunch: 12:00 p.m. – 1:30 p.m. Early compared to most European countries!

• Dinner: 6:30 p.m. – 8:00 p.m. These countries follow a more “Northern” schedule, making it easy to keep the kids’ bedtime on track.

But right now I’m in the middle of multiple new studio build-outs, a packed events calendar, planning MNT’s Portugal retreat, prepping to take the whole family abroad for the summer, and getting deliverables to brand partners on time. So that Sunday meal planning session has very little time or mental creativity behind it these days.

What I default to instead: a rotation of recipes I know I’ll always have ingredients for. And on the hardest days, we do bowls: chicken or ground turkey, whatever vegetables we have, rice or quinoa, a sauce from Trader Joe’s. Done.

I always have ingredients on hand because I order Costco delivery every Sunday or Monday morning, the same order, every single week. (I am not spending two hours in Costco and then hauling groceries up two flights of stairs.) Once a month I do a Trader Joe’s run to restock the staples.

The decision fatigue around feeding your family is real, and it’s taking up way more mental energy than you realize. I didn’t know how much until it was just gone. Here’s the full blueprint, steal whatever works.

The Weekly Costco Haul

Same order, every Sunday, automatic. I don’t think about it. I just receive it.

Produce Blueberries, grapes, mango, oranges or mandarins, bananas, strawberries, apples, plums, cantaloupe or melon, tomatoes, avocado, yellow onions, green onions, whole carrots, cucumbers, garlic, cauliflower, broccoli, peppers, spinach

Two Recipes I Make Almost Weekly

The Perfect Frittata

On Sundays, I love to throw whatever leftover vegetables I have into a frittata to have breakfast prepared for the week. No food-waste and meal-prep all in one? Sign me up.

Ingredients:

• 3-4 vegetables, cubed

• 1 tbsp olive oil

• 1 tbsp dried oregano

• 1 tbsp dried sage

• 2 teaspoons minced garlic

• 10 eggs

• ½ milk of choice (we use almond)

• 1 jar drained sun dried tomatoes

• Salt and pepper to taste

Directions:

• Cut vegetables into small cubes

• Preheat oven to 350

• Toss vegetables in a bowl with olive oil, dried oregano, dried sage, minced garlic, and salt and pepper.

• Add to a parchment lined baking sheet. Roast for 20-30 minutes, flipping halfway through cooking, until golden and slightly crisped.

• While vegetables are roasting, whisk egg mixture.

• In a separate bowl, mix together eggs and almond milk.

• Once combined, add sundried tomatoes and salt and pepper.

• Grease a 9x13 baking dish with oil or oil spray

• Place roasted vegetables in the baking dish, then pour egg mixture on top in an even layer.

• Bake for 20-30 minutes or until the eggs have puffed and it is firm in the center.

“Whatever’s Left” Sheet Pan Gnocchi

At the end of the week I toss any remaining vegetables with chickpeas and gnocchi on a sheet pan for a quick and easy dinner (this works great for lunches throughout the week as well)

• 3-4 vegetables, chopped (I like eggplant, peppers, onion and tomatoes)

• 1lb gnocchi

• 1 can Cumin Chickpeas from Trader Joe’s

• 2 tbsp olive oil

• 1 tbsp red wine vinegar

• 2 tsp oregano

• ½ cup crumbled feta cheese

• ½ cup Vegan Pesto from Trader Joe’s

• Salt and pepper to taste

Directions:

• Preheat oven to 400

• Cut vegetables into cubes

• Add vegetables, chickpeas, and gnocchi to a parchment lined baking sheet

• Add olive oil, vinegar, oregano, and salt and pepper. Toss to combine

• Bake for 20-25 minutes or until golden brown

• Top with feta and pesto

The best part of this system isn’t the food. It’s what disappears when you have one: the daily low-grade anxiety of what are we going to eat tonight.

That’s bandwidth I’d rather spend on literally anything else.

A stark contrast to my very poor decision as a 21-year-old study abroad student who went to Stockholm in the middle of February. I saw the inside of bars, museums and spent an entire day in IKEA because it was truly impossible to be outside, even with my 3 jackets on. HA!!

Everyone speaks English perfectly and the “nature-first” approach to parenting is incredibly refreshing (pun intended). It’s the perfect place to base yourself if you want a productive work summer without the heat-induced brain fog of the South.

Logistics: Getting There & Staying There

Ease of Getting There:

• Denmark: Fly into Copenhagen (CPH). It is one of the most efficient airports in the world, with a 15-minute train ride directly to the city center.

• Norway: Land at Oslo (OSL) or Stavanger (SVG). Both are well-connected to major European hubs like London or Amsterdam.

• Sweden: Stockholm Arlanda (ARN) is the main gateway. The Arlanda Express train gets you to the city in 20 minutes.

• Finland: Helsinki (HEL) is a major hub for flights coming from the U.S. and Asia.

• Flights: Direct flights from the East Coast (NYC, Newark) are common. From the West Coast, you’ll likely have one stop in London, Reykjavik, or Copenhagen

Getting Around: Stroller vs. Scooter Realism

• The Stroller: Sidewalks are wide, elevators are everywhere, and buses/trains have dedicated stroller bays.

• Kid Scooters: Mandatory. Every Nordic kid owns a scooter. The cities are incredibly flat and paved for wheels. It is the easiest way to get your kid to camp without a car.

• Is a Car Necessary? No. In fact, in cities like Copenhagen and Stockholm, a car is a liability with expensive parking and limited traffic zones. The public transit and bike lanes are so elite that you can easily manage camp drop-offs without one.

• Copenhagen Cargo Bikes: In Denmark, biking isn’t just a hobby, it’s a lifestyle. I highly recommend renting a cargo bike. You can throw the kids and all their camp gear in the front bucket and navigate the city like a local.

Housing for a 2-bedroom rental:

• Denmark: In Østerbro or Hellerup (near the camps) ranges from$5,500–$8,500/month.

• Norway: In Bekkestua (Oslo area) or Stavanger, expect to pay $3,500–$5,000/month.

• Sweden: Östermalm or Södermalm in Stockholm will run $5,500–$8,500/month.

• Finland: Helsinki is slightly more affordable, with nice 2-bedrooms in Töölö or Espoo ranging from $2,800–$4,200/month

The “American Reality” Check:

• Air Conditioning: You will almost never find A/C in Nordic homes. The good news? You don’t need it.

• Laundry: Washers are standard, but dryers are rare. However, many Nordic apartments come with access to a high-tech “drying room” (torkrum) in the basement that can dry a whole load of laundry in an hour.

• Cost of Living: The Nordics are more akin to San Francisco or New York pricing. Do not come here expecting the “everything is so much cheaper” mentality you find in Southern Europe. From groceries to your morning coffee, you are paying premium prices.

The Weather: What to Expect in July

• The Temperature: Mild and perfect. Expect highs between 68°F and 75°F. Occasionally it hits 80°F, but it’s rare.

• The Evening Vibe: Eternal twilight. It never gets fully dark, and the air stays crisp. You will definitely need a light jacket or a sweater after 8:00 p.m.

The Nordic Food Scene & Typical Schedule

What to Eat:

• Smørrebrød (Denmark): Open-faced sandwiches. Kids love the “simple” versions with egg or cucumber; parents can go wild with pickled herring and remoulade 🤪

• Köttbullar (Sweden): The classic meatballs with lingonberry jam.

• Fresh Berries: In July, the strawberries and cloudberries are at their peak. You’ll find stalls on every corner.

• Kanelbullar: Cinnamon or cardamom buns are a daily ritual for Fika (coffee break).

Typical Eating Schedule:

• Lunch: 11:30 a.m. – 12:30 p.m. They eat early here!

• The “Fika”: 3:00 p.m. Coffee and a pastry. It’s a cultural requirement.

• Dinner: 6:00 p.m. – 7:30 p.m. Much earlier than Southern Europe, which is great for maintaining kid routines.

You can base yourself in Marseille for a high-energy, urban Mediterranean experience with incredible food and artsy vibes, or you can retreat to the hills near Aix-en-Provence for that quintessential, slow-paced Provencal life.

We spent a long weekend in Aix this past summer, and TBH I loved it more than Nice! It’s culturally-rich, lively, and has everything you need to live a vibrant summer abroad. It’s also just 45 minutes away from Cassis, which is one of the most stunning seaside towns I’ve ever been to.

Logistics: Getting There & Staying There

Ease of Getting There:

• Major Airport: Land at Marseille Provence Airport (MRS).

• Flights: There are seasonal direct flights from the East Coast, but most travelers connect through Paris (CDG) or London. Expect 1–2 stops from the West Coast.

• The Commute: The airport is about 25 minutes from Marseille and 30 minutes from Aix-en-Provence.

Getting Around: Stroller vs. Scooter Realism

• The Stroller: In Aix, the cobblestones are relatively smooth, but in Marseille’s older districts like Le Panier, there are constant stairs.

• Kid Scooters: Marseille’s Vieux Port (Old Port) and the Corniche are flat, paved, and perfect for scooters.

• The Car: Essential for Provence. Be prepared for very tight parking in city centers, look for “Parking Public” and be ready to pay for the convenience.

Housing:

• Marseille Housing: A 2-bedroom apartment in a family-friendly area like the 7th Arrondissement ranges from $3,000–$5,500/month in July.

• Aix-en-Provence Housing: For a more polished, walkable experience, focus on the streets surrounding Cours Mirabeau or the quieter Mazarin district. With a car, you can also explore the more rural houses for more space. Expect to pay between $3,500–$5,500/month in July.

• Pro tip: I highly recommend prioritizing a rental with a pool. The heat in July is intense, and having an immediate way for the kids to cool off in the afternoons will keep everyone happy.

The “American Reality” Check:

• Air Conditioning: Provence gets hot. You must verify that your rental has A/C, especially in Marseille where the stone buildings trap the heat.

• Sunday Closures: Except for a few tourist-heavy spots, Sunday is a ghost town for retail. Stock up on Saturday, or join the locals at the Sunday morning flower and food markets.

• Laundry: Standard European setup of a washer in the kitchen, but no dryer.

The Weather: What to Expect in July

• The Temperature: Dry and hot. Expect highs between 85°F and 92°F.

• The Evening Vibe: Perfection. The temperature drops just enough to be comfortable, and the “golden hour” in Provence lasts forever.

The Provence-Alpes-Côte d’Azur Food Scene & Typical Schedule

What to Eat:

• Navettes: Orange blossom-scented biscuits from Marseille. They are hard and boat-shaped; kids love dipping them in milk.

• Panisse: Chickpea flour fries. They are a Marseille staple and the ultimate kid-approved savory snack.

• Ratatouille: The classic summer stew. It’s the best way to get kids to eat Mediterranean produce.

• Rosé & Pastis: For the parents, a chilled glass of Provence Rosé or a cloud of water-diluted Pastis at 6:00 p.m. is the local law.

Typical Eating Schedule:

• Lunch: 12:30 p.m. – 2:00 p.m. Many restaurants stop serving at 2:00 sharp.

• The “Goûter”: 4:30 p.m. The mandatory afternoon snack (usually a pain au chocolat or fruit).

• Dinner: 8:00 p.m. – 10:00 p.m. It’s a bit earlier than some other European countries but still a late affair compared to the U.S.

Things to Do With Kids

• The Calanques by Boat: Rent a private boat from the Vieux Port in Marseille to swim in the hidden turquoise coves of Sormiou or Morgiou.

• Le Petit Train: Every French city has one, but the Marseille version that climbs up to Notre-Dame de la Garde is actually a thrill with great views.

• Château d’If: Take the ferry to see the island fortress where the Count of Monte Cristo was “imprisoned.”

• The Haribo Museum: Located in Uzès (about an hour away), it’s a sugar-coated rite of passage for every kid in the region.

• The Luberon Villages: Spend a day hopping between Gordes and Roussillon. Roussillon has the “Ochre Trail,” which is basically a giant orange sand-box for kids to hike through.

• Aqualand St Cyr Sur Mer: A classic, massive water park about 30 minutes from Marseille for when the kids need a “non-culture” day.

• Day Trip to Cassis: This is one of the most stunning Mediterranean towns I’ve ever been to. Book a boat tour from the harbor to see the turquoise inlets, or if you have older kids, take the hike to a secluded beach in the Calanques for a truly world-class experience.

Things to Do Without Kids

• Rosé Tasting in Cassis: The white and rosé wines here are elite. Visit Clos Sainte Magdeleine for a tasting right on the edge of the sea.

• Shopping in Aix: The boutiques in the old town are incredible.

• Dinner at Le Vallon des Auffes: A tiny, hidden fishing port in Marseille with world-class seafood and a very romantic vibe.

• The Carrières des Lumières: An immersive art show projected onto the walls of a giant limestone quarry in Les Baux-de-Provence.

• Evening at a Rooftop Bar: Head to Les Réformés or La Caravelle in Marseille for cocktails overlooking the city.

Logistics: Getting There & Staying There

Ease of Getting There:

• Major Airports: Land in Zagreb (ZAG) for the city/STEM camps, Split (SPU) for the islands/Makarska, or Pula (PUY) for Istria.

• Flights: There are seasonal direct flights from the U.S. (mostly NYC to Dubrovnik), but most travelers connect through London, Frankfurt, or Munich. Expect 1–2 stops from the West Coast.

• The Commute: Zagreb’s airport is 25 minutes from the center. Split’s airport is about 40 minutes from the ferry port.

Getting Around: Stroller vs. Scooter Realism

• The Stroller: In the old stone towns (Split/Hvar), strollers are tough.

• Kid Scooters: Great for the flat waterfront rivas in Porec or Rabac, but keep them away from the steep, stepped alleys of the old towns.

• Air Conditioning: Essential in July. Temperatures hit the 90s regularly. Always verify your rental has “Klima” (A/C) in the bedrooms, not just the main room.

• The “Fijaka”: This is the Dalmatian state of mind, a “sweetness of doing nothing.” Service might be slow, and shops might close mid-day. Don’t fight it; join it.

• Laundry: Dryers are rare. Clothes are dried on lines outside. With the salt air and sun, your swimsuits will be dry in 20 minutes.

The Weather: What to Expect in July

• The Temperature: Hot and sunny. Expect daytime highs of 88°F–95°F. The Adriatic Sea is the perfect 75°F–78°F refreshing but easy to stay in for hours.

• The Evening Vibe: Balmy and social. The humidity is lower than in the U.S. East Coast, so as soon as the sun drops, the air feels incredible.

The Croatia Food Scene & Typical Schedule

What to Eat:

• Peka: Meat or octopus slow-cooked under a bell-shaped lid. It’s the ultimate “welcome to Croatia” meal.

• Ćevapi: Small grilled meat sausages in flatbread. It’s the universal kid-favorite “fast food” that is actually high quality.

• Black Risotto (Crni Rižot): Made with cuttlefish ink. It turns everyone’s teeth black, which kids find hilarious and delicious.

• Wine & Spirits: For parents, try the Pošip (crisp white) or Plavac Mali (bold red). If you’re brave, a morning Rakija with a local is a rite of passage

• Lunch: 1:00 p.m. – 2:30 p.m. Usually the biggest meal.
